Seasons first green, firm and sour mangoes are picked up to make first batch of mango pickle of the year. Avakaya is Telugu word for ‘raw mango’. Here is a step by step recipe of Andhra's most loved fiery, spicy and delicious Mango Pickle Recipe.

STEP 1:

– Choose firm and green raw mangoes for pickling. Wash the mangoes thoroughly and using a clean cotton cloth wipe the mangoes completely dry. Always slice the mangoes through the center from top to bottom Remove the stone but retain the stone wall.

STEP 2:

Take cut mango pieces in a bowl and add in mustard seeds powder and fenugreek seeds powder.

STEP 3:

Add red chili powder. Use Guntur spicy red chili powder to make this avakaya pickle taste spicy and delicious.

STEP 4:

Now to this add generous amount of salt. Salt acts as preservative. The more the salt, the more the pickle will stay fresh.

STEP 5:

Mix all the ingredients. If your making this for the first time, then wear glove and mix the ingredients. My friend says pickle has to be mixed with a clean and dry hands only.

STEP 6:

– Add generous amount of oil  . Combine well. Mostly groundnut | peanut oil or seasame oil is used in making Andhra pickles. You can use sunflower or rice bran oil too.

STEP 7:

– Finally add some peeled cloves of garlic. Even these cloves of garlic tastes yum when mixed with rice and ghee and eaten.

Final Step:

– Trasnfer the contents into a clean and dry ceramic jar or tupperware box. Tight it with a cloth or lid and place it in a clean, dark and dry corner of the kitchen for 3-4 days.
