To me smoothies are best, easy and healthy breakfast or mid-evening snack options. To make the smoothies filling and yum…I try to add homemade nut or oats or coconut milk. As you can see my today’s recipe, Pink Sunrise Smoothie is made with fresh and homemade thin coconut milk, which is my absolute favourite. As coconut milk has got its own sweetness, adding tbsp. of honey or dates is all I need to keep this smoothie sweet and indulging.
This Pink Sunrise Smoothie is loaded with goodness of fruits and vegetables. I am yet to delve using vegetables to my smoothies. This is one easy smoothie recipe which I make often. If I am making smoothies in mid evening as snack…then I opt for frozen fruits and vegetables. If I am making smoothie in morning as a breakfast, then I always use fresh fruits and vegetables.
Smoothies are yet another smart way to disguise fruits and vegetables and make lil’M drinking them. Though Allhumdulliah lil’M is not so fussy about food, she is yet to develop taste for some fruits and vegetables. So I find smoothies as quick, easy and healthy option to provide her with a balanced nutritional diet.
Pink Sunrise Smoothie
- 3 fresh Strawberries, hulled and chopped
- ¾ cup Orange or Pineapple Juice (I used Orange Juice)
- quarter Beetroot, peeled and chopped
- half Carrot, peeled and chopped
- 2 tbsp. rolled Oats
- 2 cups light Coconut milk*
- ½ tbsp. Vanilla extract
- 1 tbsp. Honey, optional
- Add all the ingredients to a blender and blend until smooth and frothy. Pour this into a serving glass and serve immediately.

If I have time, I add oats to orange/pineapple juice and leave it for 10-15 minutes before putting them in the blender with rest of the ingredients. This makes the smoothie thick and soft.
To make 2 cups of coconut milk, you need to use half of medium sized fresh coconut. Scrape or grate the fresh coconut and add ½ cup of water to it. Blend it until smooth. Pass this through a thin towel or nut milk bag. Store this coconut milk in clean and dry air tight jar and you can use the pulp in making baked goodies or any gravy based Indian Recipes like Chicken Korma, Machli ka Salan, Drumstick-Raw Mango Curry, etc.,. This coconut milk will stay fresh for 2-3 days. I recommend using it the same day or next day. To make light coconut milk, take 1 cup of above made coconut milk and add ½ cup of water to it and blend until smooth.
