Leftover Christmas cake and wondering what to do with it….??? Then Shibani of ‘Pearlsofeast‘ has got an yum idea by turning the cake into truffles…Interesting right?? Years back my search for Lamington’s recipe took me to Shibani’s blog. From then on we were in constant touch by exchanging comments on each other’s blog. As life got busy we lost touch and recently I saw her blog update in food blog feed…Seeing her back to blogging…I dropped a comment welcoming her back to blog world, she acknowledged it with a sweet mail. When I asked her to do a guest post for my event ‘Christmas and New Year Bakes’, she said yes despite being busy with travelling and holidays….I love truffles and a rich and chocolaty truffle like these tempt me to try some right now…Thank you Shibani for being part of this event and for sharing this wonderful recipe.
It is often interesting to know how we come across people and get connected through virtual world. I have known Lubna for more than 6 to 7 years now. Back in 2008, the food blogging community was indeed a handful of bloggers who had discovered their penchant for sharing and an outlet for letting their creative juice to flow. Knowing each other well was only through their blog posts or thoughtful appreciations. I often get messages with a note of appreciation and cute blog awards passed happily from kitchen flavours that were so meaningful. That’s how I came across a beautiful blog from South India. She has been persistent and extremely committed to the demanding aspect of keeping her blog inspiring with useful tips, photography and awesome recipes for a long time. I admire her passion to stay connected with new and old bloggers.
When I got back to blogosphere after a hiatus, it was touching to see a lovely email from Lubna welcoming me to the new world of food blogging that has rapidly changed and more into numbers and Likes.
Last month, when I got a message from Lubna for a guest post. Amidst of a break, I was confused and was uncertain whether I could possible come up with an idea just before Christmas. Well something came up to do with the leftover Christmas cake or pudding.
Adapted from a well-known magazine by Donna hay, I quickly pinged her saying I am ready for a guest post if that’s okay. Minutes later., I got a sweet reply … Yes please… “That would be great “
So here I am with a guest post to do truffles with left over Christmas cake/ pudding combined with dark chocolate and bit flavour that suits you. Freeze left over cake/pudding and this recipe will come to a rescue when you have impromptu dinner parties or social gatherings.
Dark Chocolate Christmas Cake/Pudding Truffles
- 350 g Christmas fruit cake / pudding, finely chopped
- 400 g dark chocolate
- 2 teaspoon vegetable oil
- Orange zest
- Orange liqueur (optional)
- Place cake/pudding, 200 g melted chocolate, orange zest and liqueur in a large bowl and mix well to combine.
- Refrigerate for 30 minutes or until slightly form.
- Roll into walnut sized balls. Melt rest of the chocolate and combine it with oil.
- Insert a tooth pick into each ball and dip in the chocolate mixture, allowing any excess to drip off.
- Place on a rack with a tray underneath. Let the chocolate set in the refrigerator for 30 minutes or until firm.
- Dust it with gold luster powder or gold leaf.
I used few balls to simply dust it with Dutch cocoa powder.
