{Ramadan Special} Guest Post: Spicy Egg Pancakes from Laiji of Laiji’s Creative Corner
Salam and Jumah tul wida mubarak…..Jumah tul wida means last Friday to Ramadan before Eid ul Fitr……It also brings in the hint that Eid is round the corner and so our event Joy From Fasting To Feasting is going to come to last…..It’s pleasure to introduce to you all Laiji of Laiji’s Creative Corner. I came across her blog through Halal Crescent Rating….The first thing which attracted me in her blog is her step-wise recipe pictures for almost every recipe….I know how tedious job is that. The happiness and peace, the month of Ramadan brings along with it, is something beyond putting down to words. It’s more of a spiritual bliss and a purification of one’s body, mind, soul and surroundings.. To enumerate my ramadhan experience from this part of the world, I got to start by saying a little about my background.. 🙂 I am basically a Keralite (Indian). But, have lived almost my whole life in Oman. I have spent a few days of Ramadan outside Oman, couple of them in Kerala. But, Ramadan for me and my family isn’t complete unless we are in Oman! Well, our Ramadan is less of feasting and more of prayer, learning the Holy Quran, charity and family time.
Preparations for Ramadan starts a few weeks ahead for us. It’s that time of the year, when dresses and other items to be donated are segregated and packed; when the whole house is cleaned and reorganized; when the kitchen shelves are emptied, cleaned and stocked with Ramadan friendly food; when most works of a whole month are set aside for maximum utilization of time for prayers, for reciting and learning the Holy Quran; and last but not least, it’s that time of the year, we calculate our share of Zakat and list out the most needy in the family and around, and reach it out to the most deserving the whole year through, starting from each Ramadan..
Living in the middle-east, gives an added benefit of having a ‘ramadhan atmosphere’ everywhere. The days are more calmer and quieter, the evenings busy and there’s the smell of food fuming out of every home, and people flooding out to masjids for prayers and the recitation of the Holy Quran everywhere. Best of all, lesser working hours, brings all members of each family together during iftar time. 🙂
At my house for iftar, we often have along one or two close relatives who live away from family (rather bachelors) or travelers. We will all be gathered at the table waiting for the magrib adhaan and open our fasts with dates and water. Followed by a bowl of fresh fruits salad and there will be one item of fried, steamed or baked snack. Then the men leave to the masjid for prayers, and the women pray at home. By the time the men are back, tea would be ready and dinner is served. One item of curry, one item of bread or rice and most often there’s ‘JeerakaKanji’ a kerala Ramadan special rice porridge. Once, dinner is done, everyone is busy freshening up and getting ready to go for tharaweeh. That’s another beautiful advantage here. Almost every masjid has place for women. After the tharaweeh prayers, we are all back home, sit together for a while, have something very light and then everyone disperses off for some Quran recitation and then sleep. Then, everyone is up again for suhur. It’s usually leftovers, or some like cereals, or just fruits and nuts. Once again prayer and Quran time and then everyone is off for a short nap before going for work. Work, prayers, reciting of Quran, cooking and settling down for iftar and that’s how the cycle goes for those thirty beautiful days of Ramadan. 🙂
Now for the recipe.. 🙂 While scrolling across the recipes shared by other bloggers at Lubna’s “Joy of fasting to feasting” since the last six years, seemed like someone or the other had covered almost most of the common Ramadan recipes I had in mind 😉 So, I decided to put up something of my own invention, which could possibly not have been put up anywhere so far.. 😉 It’s a very simple recipe, that’s both easy to make and light for the fasting stomach. 🙂 You could have it either for iftar, dinner or suhur. Spicy Egg Pancakes
INGREDIENTS:

1 large

1 medium sized

1 or more (depending on your preference)

1/2 inch piece (skinned)

||
|

2-3 stems
|
||
|

Couple of leaves (if you like)

To taste

1/2 teaspoon (Roasted)
|

1/4 teaspoon

1 cup

1 tablespoon for batter and as needed to grease pan
|

PREPARATIONS:
|
- Into a chopper, add all ingredients and give a couple of blitz.
- We need a batter that’s smooth as well as, has chew able bits of the veggies in it.
- Heat a pan, grease it on low heat and pour two ladles of the batter and spread.
- Oil the top and sides and turn the pancake over and oil the other side as well if required.
- Cook until both sides begin to brown and the ends slightly crisp. Fold into two or three and its ready to be served.
- This is a snack by itself. But, you could also serve it with curry. As easy as that! 🙂
