Misty mornings, chill breeze and cloudy skies is what January is all about…I love this weather, when sun comes shining little late. I got up to the beep sound on my mobile…it was just a reminder to wish a friend on her first day of office….I am just forgetting things these days so thought of keeping an reminder. Took my mobile and went to other room to call her…then my phone vibrated…it was another friends name flashing over….
Wondering why she is calling at such a early hour in the morning, I picked up the call and in a hasty voice said ‘hello’….she said I have got a plan…with a smile on a face I said ‘a plan’….?? Then she told me what the plan is in detail but in hurry…as we have got less time to work on that plan….without delay I said I am in for the game…we bunch of girls thought was to drop by at our friend’s working place (who just joined the office) in the afternoon to surprise her…not to call of as of now and let her think that we forgot to wish her best wishes….
As planned we three dropped at friend’s office on time and called her to come to food court and hanged up…..this would have puzzled her but as being lunch time she came out to food court…..seeing all three of us holding placards for her saying ‘Best Wishes on New Job’ with flowers and balloons…(that was the plan)….she was happy with tears in her eyes…and came fast to hug us all at a time….Then she said controlling her emotions, as you guys did not call me in the morning, I was too angry and I didn’t even have my breakfast…now my stomach is on rumble…Laughing we said, lets go for ‘pizza party’….scanning the food court we found ‘Dominos’ on first floor…when we set to order there…my friend announced she has got Dominos Coupons with her…how great is that we thought and had a hearty meal discussing everything from shoes to new office….:-)
After hearty meal like that, I was not at all in a mood to make anything elaborate in dinner. At first I thought of skipping my dinner, but then I thought it would be good if I have some comfort bowl of soup…Soup to me is like a liquid food, a bowl of comfort and warmth……. I make soups more often and mostly during winter nights and evenings…so it’s rare that I click pics of soups…as I always want my soup to be indulged hot and I make it when I am in a mood to have it instantly….
Long back when Jehanne sent me her heart-healthy mini cookbooks, I have bookmarked some soup recipes to try over…This Carrot-Coriander Soup was my first choice to make…as I have got all the ingredients readily available at home…so without any delay I made this warming soup….I must say….nothing can beat a heart-healthy warming comfort bowl of soup on a chilled winter night…
Carrot and Coriander Soup
- 2 Carrots, peeled and cut into 1’ inch pieces
- 1 Onion, peeled and chopped
- 2 cloves Garlic, peeled
- 1 tbsp. Olive oil
- 1 tbsp. Black pepper powder
- 1 tbsp. Paprika
- ½ tbsp. Coriander powder
- 6 sprigs fresh Coriander leaves
- 1 tbsp. Cream, optional
- In a heavy bottom cooking vessel, add oil and drop in chopped onion and garlic. Fry till onion slices turn translucent.
- Now add carrot pieces, black pepper powder, coriander powder, paprika and oregano. Stir on low flame and add water. Simmer until carrots turn soft and tender.
- Add coriander leaves. Transfer this to a blender and pulse till smooth.
- Transfer back to the pot and place on the stove over low heat till you get thick soup consistency.
- Season with salt and finish it off by adding cream, if using. Serve warm.
- Add ‘love’ to make this soup taste ‘Yummy’.
Original recipe calls for 1 tbsp. Oregano powder. As I ran out of oregano, so I skipped it.
